Miso-Roasted Carrot & Citrus Salad with Crunchy Seeds and Herby Yogurt

Serves: 4
For the Roasted Carrots & Citrus:
1 pound rainbow carrots
2 tablespoons white miso paste
1 tablespoon olive oil
1 teaspoon honey or maple syrup
2 oranges or blood oranges, peeled and sliced into rounds
For the Herbed Labneh:
1 cup labneh or full-fat Greek yogurt
2 tablespoons fresh parsley, chopped
2 tablespoons fresh dill, chopped
2 tablespoons fresh chives, chopped
1 teaspoon lemon zest
1 tablespoon olive oil
½ teaspoon salt
For the Crunchy Seeds:
2 tablespoons sesame seeds
2 tablespoons pumpkin seeds
1 tablespoon sunflower seeds
½ teaspoon smoked paprika
Final Garnishes:
1 tablespoon olive oil
1 teaspoon Maldon salt
Extra fresh herbs for topping
Preheat the oven to 425°F.
Peel and slice carrots into halves or quarters, depending on size.
In a large bowl, whisk together white miso, olive oil, and honey until smooth. Toss the carrots in the mixture until well coated.
Spread carrots onto a parchment-lined baking sheet and roast for 20-25 minutes, shaking the pan halfway through.
In the last 5 minutes, add orange slices to the pan, letting them caramelize slightly.
In a bowl, mix labneh (or Greek yogurt) with parsley, dill, chives, lemon zest, olive oil, and salt.
Stir well and taste—adjust seasoning if needed.
In a small dry pan over medium heat, toast sesame, pumpkin, and sunflower seeds for 2-3 minutes until fragrant.
If using, toss with smoked paprika.
Spread the herbed labneh onto a serving plate.
Arrange the roasted carrots & citrus over the top.
Sprinkle with toasted seeds and fresh herbs.
Drizzle with a little olive oil and finish with a pinch of flaky salt.
