Roasted Chestnut Mushrooms

Serves 4



1 pound chestnut mushrooms

2 tablespoons olive oil

4 sprigs fresh thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cloves garlic, minced


Heat the oven to 400°F 

  1. On a baking sheet lined with parchment paper, combine the mushrooms, olive oil, thyme, salt, and pepper. Toss to coat evenly.

  2. Roast for 25-30 minutes, or until golden brown and crisp, stirring halfway through.

  3. In the last 2 minutes of roasting, add the minced garlic to the mushrooms and toss to combine.
